This traditional sweet potato soufflé is the perfect size for each guest at your next dinner party! Compliments of Executive Chef Chris Smythe from Noble Restaurant at the Prince of Wales.
Sweet Potato Soufflé
Serves: 8
Ingredients:
2 lbs Sweet potato puréed
1/2 tsp ground Cloves
1/2 tsp ground Cinnamon
1/2 tsp ground Nutmeg
1 tbsp Cream of Tartar
10 Egg whites whipped to full peak
Salt & pepper
8 Buttered ramekins
Method:
- Blend all the spices and seasoning into the sweet potato mix.
- Then add the cream of tartar, and fold the egg whites into the sweet potato mixture.
- Fill each ramekin and bake at 350 degrees for about 15 to 20 minutes.
