Mint Chip Cookies
Yields 25 Cookies
Ingredients
227 g Unsalted butter, room temperature
100 g White sugar
200 g Brown sugar
2 Eggs
1 tsp Vanilla
1 tsp Mint extract
343 g All purpose flour
2 tsp Baking soda
¼ tsp Salt
170 g White chocolate chips
1 drop Red colouring
1 drop Green colouring
Method:
- Pre-heat the oven to 350°F.
- Start by creaming the butter and sugars together until smooth and the colour resembles that of a Tim Horton’s double double in colour.
- Add in the eggs and extracts and mix until homogeneous.
- Add in the dry ingredients and mix 90% of the way, at this point add your chocolate chips and mix until no flour remains.
- This is when you add your colourings on different ends of your bowl and mix gently until a swirl appears.
- Scoop your cookies at approximately 1 ½ tablespoons in size and form into a round ball.
- Bake for 10 – 11 minutes and let cool before eating.
Tips:
- Exclude the colourings if you don’t want any artificial colours.
- Freeze cookie dough pre-scooped and bake from frozen for up to 2 months.
