Millcroft Inn & Spa’s Fig and Goat Cheese Scones

Fig and Goat Cheese Scones

Yields 8 scones

Ingredients:

2 cup All purpose flour
¼ c granulated sugar
1 tbsp Baking powder
½ tsp Himalayan salt
6 tbsp Unsalted butter, cubed and cold
½ cup Fresh figs, chopped
½ cup goat cheese, crumbled
2/3 cup Half and half cream (plus extra for brushing)
¼ tsp Vanilla extract
Fresh thyme (optional)

Method:

  1. Preheat the oven to 425°F.
  2. In a bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Cut in the butter with a pastry blender until the mixture resembles coarse crumbs.
  4. Add in chopped figs and crumbled goat cheese.
  5. Add vanilla to 2/3 cup of half and half cream and stir into dry ingredients until moistened.
  6. On a lightly floured surface, knead dough gently 5 – 6 times.
  7. Pat into a 1 inch thick round.
  8. Cut into 8 wedges, and place on parchment lined tray 2 inches apart.
  9. Brush tops with half and half then sprinkle each scone with a pinch of Himalayan salt and minced thyme.
  10. Bake until golden brown for approximately 12 – 15 minutes.

Tip:

Slice and serve with prosciutto for a snack.
