Vintage Hotels’ Icewine Cocktail Recipes

This January, join us in celebrating Niagara’s world-renowned Icewine grape harvest season. Experience the luscious, intensely flavoured wine at our local wineries and special events like the enchanting Icewine Village in Niagara-on-the-Lake.

To celebrate Icewine season we’ve asked the teams at Cannery Restaurant at Pillar and Post, Noble Restaurant at Prince of Wales and Tiara Restaurant at Queen’s Landing to create cocktail recipes that you can make and enjoy at home. All recipes compliments of our Food & Beverage teams. 

Niagara 75

Raise a glass to Icewine season in Niagara-on-the-Lake with a Niagara 75 cocktail, featuring the luxurious combination of Niagara Icewine, vodka, lemon juice, and sparkling wine.

Ingredients: 

1 oz Riesling or Vidal Icewine
1 oz your favorite Vodka
½ oz Fresh lemon juice
3 oz Niagara sparkling wine
Lemon peel for garnish

Method:

  1. Pour the Icewine, vodka and lemon juice into a mixing glass with ice and stir until well chilled (about 45 seconds).
  2. Pour into a champagne coupe or flute and top with sparkling wine and garish with a lemon peel.

Icewine Spritz

This New Year, enjoy a crisp Icewine spritz, a nod to the exquisite flavors of the Niagara Icewine season.

Ingredients:

½ oz Cabernet Icewine
½ oz Elderflower liqueur
1 oz Soda water
Sparkling wine
Pomegranate seeds for garnish

Method:

  1. Pour the Icewine, elderflower liqueur and soda water into a glass.
  2. Top with sparkling wine.
  3. Garnish with pomegranate seeds for garnish.

Niagara Maple Fire & Ice Martini

Enjoy the Niagara Icewine season with a Niagara maple fire & ice martini, a unique cocktail that brings together the warmth of maple and the chill of Icewine.

Compliments of Food & Beverage Manger Jeremy Harb from Noble Restaurant at Prince of Wales

Ingredients:

½ oz Icewine
1 oz Sortilege maple whisky
1 oz Absolut vodka
1 oz of Crème de Cacao              
2 drops of Tabasco
Dark chocolate powder
Chili peppers
Chili pepper for garnish

Method:

  1. Place the whisky, vodka and crème de cacao in a shaker with ice.
  2. Shake vigorously for 20 seconds. 
  3. Pour into a martini glass.
  4. Add the Icewine and tabasco sauce. 
  5. Rim the glass with chili pepper flakes.
  6. Garnish with sprinkler of dark chocolate powder on top and garnish with a chili pepper.
