Indulge in the delicacy of our red wine pate de fruits, also known as wine gummies courtesy of Pastry Chef Jayne Inouye. A perfect balance of wine and fruit for your sophisticated palate. Infuse your favourite red wine with fruit purée, sugar, corn syrup and pectin for a rich, wine-flavored treat.
Red Wine Pate De Fruits (Gummies)
Yields 64 Gummies
Ingredients
4 oz Unsweetened apple sauce
8oz Red wine (of choice)
2 tbsp Corn syrup
3 tbsp Pectin
1 cup White sugar
1 tsp Lemon juice
Extra white sugar
Method:
- Bring the apple sauce, wine and corn syrup to a boil in a pot.
- Add in the pectin and sugar mixture and bring back to a boil, letting the temperature reach 225°F (should take about 10 minutes on medium heat).
- While boiling, spray and line an 8” x 8” pan with parchment paper.
- Take the pot off the heat and add the lemon juice, stirring until evenly combined and pour onto the lined pan.
- Put on oven mitts and transfer your pan to the place it will set for the next 12 hours until chilled (at room temperature).
- Once chilled, you have the option to either cut into 1” x 1” cubes or use a mini cookie cutter and cut out the shape of your choice (a grape cluster, fall leaves, a pumpkin, etc.)
- Once cut, toss into a bowl of plain white sugar until each side is evenly coated.
- Enjoy immediately or store in an air tight container in the freezer with today’s date on it.
- Store for up to 3 months in the freezer and let thaw for 5 minutes before enjoying.
Tip:
- Using an electronic thermometer is best as it reads a lot more accurate than you would with a glass! The temperature being off by just a few degrees could make the difference of soup and gummies!
- When cooking with high temperatures, you must be extra careful and wear oven mitts when handling any equipment this molten gummy touches (pots/pans).
