Savor the bounty of summer! Inn On The Twenty’s pastry team has crafted delicious vegan and gluten-free strawberry peach squares that are bursting with fresh flavor. A delightful combination of fresh berries and juicy peaches in a perfectly flaky crust. These squares are the perfect way to enjoy fresh, seasonal flavors without any dietary restrictions.
Strawberry Peach Squares (vegan & gluten free)
Yields 48 squares
Ingredients for base:
450g Gluten free flour
166g White sugar
3g Salt
300g Vegan butter
Ingredients for Fruit Layer:
227 g Strawberries, diced
227 g Peaches, peeled and diced
30 g Lemon juice
20 g Cornstarch
Ingredients for Crumble:
350 g Quick oats
385 g Ground almond
350 g Maple syrup
189 g Vegetable oil
7 g Ground cinnamon
14 g Salt
Method:
- Preheat the oven to 375˚F. Mix gluten free flour, sugar, salt, and vegan butter in a large bowl until it forms a dough.
- Spread the dough mixture in a greased and parchment paper lined baking sheet.
- Bake for 15 minutes.
- Meanwhile, add strawberries, peaches, lemon juice, and cornstarch in a medium bowl until combined.
- In a large bowl add oats, ground almond, maple syrup, oil, cinnamon, and salt. Mix until crumbly.
- Spread fruit mixture on top of cooked base and top fruit mixture with crumble.
- Place back into oven at 375˚F for 25 minutes.
- Let cool and cut into 1.5″ x 1.5″ squares.
- Garnish with fresh berries.
Tip:
Freeze up to 2 months in an air tight container.
